Don’t know how it is with you guys, but if I would let my son choose any meal he’d like, first thing would be pasta (just with butter and Parmesan cheese), second definitely would be home made Bircher muesli. He just adores it, must-have being lots and lots of raisins! Perfect as a healthy start to the day as breakfast, but also ideal as a snack in the afternoon (or even dinner, if your kid convinces you!).

Ingredients (for approx. 4 portions):

100g Oatmeal

1 Greek yoghurt (or other plain, unsweetened yoghurt)

1 handful of raisins

1 apple, peeled and ‘grated’ (if you don’t have an apple at hand, apple sauce is a life saver)

150-200ml Milk (see how much you need, the consistency needs to be nice and smooth)

Berries to decorate (optional)

Side note: I prepare without sugar, as the raisins and apple are sweet enough, but if you want, you can of course also add sugar.

Directions

Place the oatmeal, milk, yogurt and raisins in a bowl. Peel the apple, grate it into the bowl. Mix together and place in the fridge over night (or at least a few hours so all gets soggy). Next morning, possibly add a little more milk or yoghurt so all is creamily smooth. Decorate with any berries you have. Enjoy!

By the way as variation: Super delicious is also a berry coulis (berries smashed with a little sugar, heat and then let cool off) inside.

Plus: the muesli stays fresh for a couple of days in the fridge!
