Remember not too long ago I posted a similar dish? Well I pimped it a bit, well actually a bit more than a bit. Some additional different ingredients combine this to a taste explosion in your mouth. Oh yes, you definitely want to try this out!!

Ingredients for 2 as a main course
400-600g Burrata
2-4 white flat peaches
Approx. 50g Pine Nuts, roasted
Juice of 1/2 lemon
1 avocado
Olive oil (approx. 1 tablespoon per plate)
Salt & pepper
For the coulis (pre-prepare ideally):
200g blackberries (fresh or frozen)
3 tablespoons sugar
Directions
Roast the pine nuts in a pan (no oil needed!), stirring continuously, so they don’t burn (which happens really easily). Set aside in a separate bowl and let cool.
Pull apart the Burrata into chunks, wash and cut the peaches into chunks (just around the pit). Peal and cut the avocado into slices. Pour the pine nuts over the Burrata & white peaches. Drizzle the fresh lemon juice on top, as well as the olive oil. Salt & pepper to taste.
For the coulis:
Smash the fresh (or frozen) blackberries in a pot, heat with approx. 3 tablespoons of sugar. Ideally you sieve the berries through a sieve to remove the seeds. Let cool and then drizzle over the salad.
Serve immediately. Enjoy!
