We are enjoying our lovely family vacation in the beautiful house of my in-laws in Tuscany. They not only have a great pool, donkeys, a tractor (yes, all the things my little one adores), but also fig trees in the garden. And lucky enough – we just harvested the last figs of the season! So what else could I have done than directly prepare a meal with them included?

Ingredients
1 store bought puff pastry (you can of course prepare yourself, but I wanted it to go quick)
250g creme fraiche
2 eggs
Salt & Pepper
Approx. 150-200g roll of goat cheese
5 (small) figs
2-4 slices of prociutto (I used San Daniele, but Parma or Serrano or other raw ham will be fine too)
1 handful of walnuts
2-3 sprigs of fresh thyme
1-2 teaspoons of honey
Directions
Pre-heat the oven too 180°C air circulation.
Lay the puff pastry in a round form.
Mix together creme fraiche, eggs, salt & pepper. Pour into the form.
Rip the ham into smaller pieces and place into the creme. Now cut the goat cheese and the figs into slices and place into the creme too, pressing them down a little. Last, place the walnuts neatly on top.
Bake in the oven for approx. 25-30 minutes (depending how your oven heats) until golden brown. Just before ready, remove from the oven, place the thyme twigs on top and drizzle the quiche with honey. Put in the oven again for 3-5 minutes.
Remove from the oven. Serve warm or cold. I like serving a green salad together with the Quiche. Enjoy!
