We were invited to a BBQ at friends and were served this delicious dip. Of course I needed the recipe right away and it’s a delight! A definite must-try and ideal for a BBQ or dip for bread.

Caro’s recipe

1 pack of Philadelphia cream cheese

Handful chopped sun-dried tomatoes in olive oil

A teaspoon tomato purée (makes the nice and red color)

150g salted & roasted cashew nuts, chopped (keep a few cashew nuts whole, for garnish)


In a kitchen machine, chop the sun-dried tomatoes. Add the cashew nuts, tomato purée and cream cheese. Mix together until fairly smooth.
