Always on the lookout for new everyday dishes that don’t require endless time to prepare, this is once again ideal. Loving artichoke hearts and baby spinach and in combination with the coconut milk just gives the extra something. I am sure this dish is also great with quinoa or Couscous or even Asian Udon noodles. Ingredients

250-300g chicken fillets (surely you can use chicken breasts)

1 tablespoon olive oil

Salt & pepper

1 teaspoon dried basil

1 onion, finely chopped

1 pack baby spinach

1 glass of artichoke hearts (not in oil)

1/4 liter chicken broth

1 pack coconut milk

Juice of 1/2 lemon

1 teaspoon starch (Maizena)

Rice (I used whole grain rice, basmati will surely work fine too, alternatively quinoa, Couscous or Udon noodles)

Directions

Season chicken with salt & pepper and dried basil. Heat olive oil in a pan and fry chicken, approx 5 minutes on every side. Set aside.

Prepare the rice according to the pack.

In the same pan, fry the finely chopped onion. Now pour in the chicken broth. Add artichoke hearts and spinach, as well as coconut milk and lemon. Last add the starch. Season with salt & pepper to taste.

Place rice on a plate and top with the coconut chicken. Enjoy!
