
Yay, it’s apple season again and we have lots of apples to pick from our garden. The kids have been climbing up the trees to get the best ones! And now we need recipes to use them all and not only make apple sauce! but also check out the apple crumble.
So here goes…
Ingredients
3 eggs
170g soft butter
1 sachet (1 tablespoon) of vanilla sugar (alternatively a teaspoon vanilla extract)
150g sugar
150g plain unsweetened Jogurt
180g flour
1 teaspoon baking no powder
4-6 apples, depending on the size (ours are quite sour)
Optional: cinnamon
Directions
Line the loaf pan with parchment paper. Preheat the oven to 180°C on air circulation.
Mix together butter and sugars, add the eggs in one by one. Now add Joghurt and the dry ingredients.
Meanwhile peel the apples and slice thinly, ideally with a mandoline slicer.

Pour the batter over the apples and put the mix in the loaf pan. Sprinkle the cake with a little (cinnamon) sugar on top and place in the oven for approx. 45 minutes. I checked on the cake after 30 mins. If still too wobbly, let if bake for another bit. Enjoy!

All the recipies are wonderful. I saved them all and tried most of them. However, what is a mandolin slicer or how thin/small must the pieces be?

Hi Sabine! So kind – thanks for your feedback!! A mandoline slicer is a ‘Gemüsehobel’. Just thin slices…approx. 1-2mm! Looking forward to your feedback on the cake 🤩
