Fluffy Lemon Cake

It’s cake time! This is another reason I like the end of summer and the start of the colder season. It gets colder outside and a coffee & cake combo in the afternoon is just pure bliss. Relax a bit, either with a good friend, catching up on life or just for yourself with a little me-time. Just as a little info – the cake is not super sweet with the amount of sugar, but just right, for my taste at least!

The Best Apple Cake

Apple cake is always a good idea. Its fresh, tasty and easy to prepare! I have slightly adapted one of our family recipes. Hope you like it too! You can use a bundt form or any other baking form you want. Depending on the size, either the apples stay on top or (like mine this time) covers up the apples. Either way, the cake turns into a moist and absolutely delicious delight.

Easy Coconut Cake – Bôlo de Côco

Summer has finally arrived!! And we are always looking for desserts that are lighter and also practical to take along if you are invited or on the way to a picnic. Give this delicious moist coconut cake a try!  It originates from Brasil and is called «Bôlo de Côco». And another plus: it’s gluten free!! Best is to use a bundt form for preparation.

«Hugo» Cake (Elderflower & Prosecco)

It was THE drink in Europe a few years ago – The Hugo. Very easy to prepare: you just need prosecco, elderflower syrup and mint leaves. And ice cubes of course. Still one of my absolute favorite drinks. With the elderflowers blooming all around, I decided to make a Hugo cake together with a close friend, whilst drinking Hugo of course. And guess what – it turned out great! A delicious and fluffy (but not dry) cake.

Cantuccini & Greek Yoghurt Tart

A lovely tart, that might remind you of a cheese cake at first, but actually uses Greek yoghurt instead. It you want to have it sweeter, just add a little sugar into the yoghurt filling. Easy to make and no need to bake!

Matcha & White Chocolate Chip Cookies

This is a must if you are a Matcha green tea fan!! These cookies are super delicious, really easy to make and look great. You can of course also prepare without white chocolate or combine with dark chocolate, macadamia nuts or anything else you want to add. Have fun!

Poppy-Seed Grapefruit Cake

Not quite sure what caught my eye, but I am guessing it was the poppy seeds, when I stumbled over this recipe. Its fairly simple to make and with the Grapefruit it really is nice and fresh! I didn’t use up all the batter for the cake and made mini bundt cakes on top, to snack in between!
