Some weeks just call for comfort food and this sugar tart fulfills this. Its sweet taste makes the world look a lot better again! It’s perfect for an afternoon tea time or as a dessert. Or just when you feel the time is right. Enjoy! Oh and you can of course decorate the cake in different ways – Halloween style, with icing sugar or just with whipped cream.

Ingredients
For the pie crust:
200g flour
100g butter
½ teaspoon salt
3-4 tablespoons cold water (to make dough elastic)

For the filling:
6 tablespoons flour
150g brown muscovado sugar
350ml (unsweetened) evaporated milk
125g butter
½ teaspoon salt
1 teaspoon vanilla extract

Directions
Pre-heat the oven to 200°C (circulating air).

For the pie crust:
In a mixer, combine all the ingredients and then spread the dough into a pie form.

For the filling:
Combine flour and sugar in a pot, stir in the evaporated milk, butter, salt and vanilla.
Cook whilst constantly stirring, until the mixture comes to a boil.
Pour the filling into the prepared pie form and bake for 5 minutes and then reduce the heat to 175°C and keep baking for another 25 minutes.
