Pesto is such a great invention. It’s delicious, easy to make and can be eaten in so many ways. One of my favorite ways to enjoy it is with pasta in combination with mozzarella. Hope you like it!

Ingredients for 4
For the pesto:
2-3 packs of fresh basil leaves
60g roasted pine nuts
50g Parmesan cheese
At least 100ml olive oil, plus another approx. 20-30ml to add later
Salt & pepper
For the rest:
500g pasta (I used Oricchette)
2 packs of mini Mozzarella balls
80g roasted pine nuts
Directions
For the pesto:
Roast the pine nuts (roast the additional ones to sprinkle on top of the pasta at the same time) in a pan without oil until golden brown (careful – they burn really quickly). Set aside to cool off.
Meanwhile grate the Parmesan cheese.
Put all ingredients into a blender and mix until all is combined well.
Now add the additional olive oil.
For the rest:
Prepare the pasta according to the pack. Mix the pesto with the pasta. Drain the water from the mozzarella balls and “sprinkle” on top together with the roasted pine nuts. Enjoy!
Note on the side:
Of course you can also just cut any ordinary mozzarella into bite-sized pieces and add to the pasta.
You can also add cashew nuts into the pesto if you like!
And you can save the pesto in a jar in your fridge, if you have prepared too much!
