Yay – it’s gooseberry time! And what better can you have than if they grow in your backyard? And that’s why I made a great gooseberry cumble. Unfortunately we didn’t have too many left (we need to save them from the birds), but here is the recipe for a proper crumble for a few people.

Ingredients
500-750g gooseberries
2 tablespoons sugar
250g butter
150g sugar
200g flour
50g plain oats
Directions
Pre-heat the oven to 200°C air circulation.
Wash the gooseberries, remove any unwanted bits and pat dry. Mix with the 2 tablespoons sugar and place into a casserole.
Mix together butter, sugar, flour and oats until you have a crumbly consistency.
Now crumble on top of the blueberries in larger chunks.
Put in the oven for 20-30 minutes, until the crumble is golden brown.
Serve plain or with vanilla ice cream or whipped cream!
