Ingredients for 6-8
Barbara’s recipe
150-200ml fresh lime juice (= approx. 10 limes)
500g plain yoghurt
400g cream, whipped
6 leaves/sheets of gelatine
100g sugar
Directions
Lay the sheets of gelatine in a bowl with cold water to soak.
Juice the limes and keep the zest of 1 lime and place aside.
Place sugar and lime juice in a small pot and heat. Squeeze out the gelatine and place inside the pot and let dissolve.
Put the yoghurt in a bowl, add the lime zest and pour the lime juice mix on top and stir.
Meanwhile whip the cream. Once the yoghurt mix has cooled off, carefully mix the whipped cream inside.
Now divide equally into glasses. Possibly with a lime slice inside the glass. Place the dessert in the fridge (or if cold outside, then there) and serve after a few hours. Garnish with a bit of lime zest. Enjoy!
