What a D E L I G H T. I just loooovee a good Tarte au Citron. Actually fairly easy to prepare and ideal to make in the morning to have a fantastic dessert for guests arriving in the afternoon of evening.

For the dough:
100g Sugar
250g Butter
350g Flour

For the filling:
150g Icing sugar
Zest of 3 lemons
150g Fresh lemon juice (approx. 5 lemons, depending on size and juice)
250g Heavy liquid cream (creme double)
9 Eggs

For the dough:
Pre-heat the oven to 150°C (or according to pack if you use a bought dough). Heat the butter in a pan. Add sugar and flour and mix to create a dough. Remove and spread evenly in a round baking tin. Place dough in the oven and remove after 15 minutes when it’s light golden brown. Remove from the oven.

For the filling:
Reduce the heat of the oven to 120°C. Place the sugar in a bowl. Zest the lemons and cut as small as possible (possibly in a mixer). Add lemon juice, cream and eggs and mix. Pour the filling into the baking tin and bake in the 120º C warm oven for 30 – 40 minutes. The mixture should still be wobbly in the middle like a pudding. Let cool in the fridge for 4-6 hours.
