Years back on the island of Capri (Italy), I had a similar dish in a restaurant and since then, I have been trying to figure out, how to make this delicious pasta. And this is the closest I have gotten and really like it. Few ingredients, mixed up together brilliantly! Give it a try!

Ingredients
500g Linguine Style Pasta
2-3 lemons (depending on size), zest & juice
250g ricotta cheese
150g Liquid cream (or mascarpone)
150g Parmesan cheese (plus more to serve at the table)
2-3 tablespoons Olive oil
Salt & pepper
Directions
Prepare the pasta according to the pack.
In a bowl, stir together ricotta, lemon juice, zest of 1 lemon, parmesan, olive oil, salt & pepper.
Drain the pasta, reserving 1-2 glasses of the pasta-water.
Once the pasta is ready, mix with the ricotta combo, add reserves pasta-water if needed to thin.
Either serve on individual plates or in a big bowl. Drizzle remaining lemon zest on top and garnish with pepper.
