Oh my!! This is just too good to be true. These Blondies are to die for! Moist, chewy, sweet and just pure sin!! And the best part about them is, they are actually pretty easy to make. A definite must-try!!

Ingredients
Adapted from Fabienne’s Recipe
150g butter
1 egg
150g brown sugar
1/2 teaspoon baking powder
200g flour
150g chopped white chocolate
100g frozen raspberries (you can also use fresh one, but need to make little holes into the dough, so they don’t squish)
50g chopped salty macadamia nuts (or non-salted ones and add a pinch of salt to the dough)

Directions
Pre-heat the oven to 180°C (top and bottom heat).
Prepare a square (or smaller rectangular) baking tin with parchment paper.

Melt the butter in a pot (or microwave). Let cool slightly, then mix with the sugar. Next add the egg (but the batter is not allowed to be hot, otherwise the egg will clot). Next, mix together the dry ingredients into the batter. Last, add the chopped white chocolate and macadamia nuts.

Pour the batter into the baking tin. Press the raspberries into the batter and bake the blondies for 25-30 minutes. Use a wooden skewer to check if ready – if still doughy, leave in for another bit, if the skewer is dry, they are ready.

Cut into little squares and enjoy warm or cold!
