Oven Cauliflower & Chickpeas with Tahini-Lemon dressing

Looking for more healthy, but easy to prepare home office meals that more or less cook themselves, I stumbled upon this gem and of course wanted to share. Black Truffle Pasta

Simple, elegant and just purely delicious. This truffle pasta is so easy to prepare, it’s ideal for a very luxurious quick (working) lunch or for a dinner. The pasta cooks itself and the sauce can easily be prepared in parallel.

Minced Meat, Carrot and Potato Stew

The winter has been cold and snowy and what better can you heat up with, than a delicious stew. My friend Caro made it once and I have honestly been making this soup nearly every week since. It’s super fast to prepare or you can also pre-prepare it and eat later. In any case, one of my favorite finds this winter.

By the way, you can also put soup noodles inside instead of the potatoes. I always need to prepare a portion, as my oldest doesn’t like the cooked potatoes – grr! Plus I always add the dried spices later…

Spinach, Artichoke and Chicken in Coconut Milk with Rice

Always on the lookout for new everyday dishes that don’t require endless time to prepare, this is once again ideal. Loving artichoke hearts and baby spinach and in combination with the coconut milk just gives the extra something. I am sure this dish is also great with quinoa or Couscous or even Asian Udon noodles.
