Chickpea-Avocado-Burgers with Mint-Yoghurt

Prettaly_ChickpeaAvocadoBurgersWithYoghurtSauce.jpg

Next to all the lovely Advent and Christmas seductions, here is a healthy, quick and simple recipe. I more of less reused the yoghurt sauce that I already posted in a different recipe, but just thought it would match nicely. This recipe is surely also great in summer time. Autumn Lambs Lettuce with Pomegranate Seeds, Avocado & Honey-Mustard-Marinated Chicken

Something healthy between all of the wonderful cake recipes from the past. It’s simple, easy and a great combination for a nutritious dinner (or lunch) salad. Continue reading “Autumn Lambs Lettuce with Pomegranate Seeds, Avocado & Honey-Mustard-Marinated Chicken”

Sfoglia alla Valdostana

Prettaly_Valdostana_6.JPG

Sometimes its just super nice to reminisce about the last vacation you had…and for me this involves the thought of a delicious Valdostana. Last time I enjoyed a piece was at the pool side for lunch in Italy. But what is a Valdostana? It’s a puff pastry quiche style dish filled with ham and cheese. Perfect to go with a green or cucumber salad.

Lambs Lettuce with Mushrooms, Pine Nuts, Avocado & Figs

Prettaly_LambsLettuce_MushroomPineNutsAvocado_Figs.jpg

The last sun rays are warming our souls and just before we go into the whole autumn food (which I am very much looking forward to!), a salad is just what you need. And figs are great this time of year and give the little extra to the recipe.

Fish with cooked Iceberg Lettuce

Prettaly_FishWithIcebergSalad.jpg

Quite some time ago, on a hens weekend to be exact, we attended a Viennese cooking class in Hamburg, Germany. We made a really delicious dish, cooking salad in a pan. It’s low carb and a perfect healthy (weekday) dinner in combination with a white fish.

Here is the easy recipe: Continue reading “Fish with cooked Iceberg Lettuce”

Detox Salad: Spinach, Shrimp, Avocado & Pink Grapefruit

DetoxSpinachShrimpAvocadoSalad.jpg

A wonderful food inspiration from a good friend, who has her own blog – but I need to warn you, its in French! She made me this salad one day and I fell in love with it straight away. Perfect detoxing, great ingredients, beautiful to look at and absolutely delicious. I actually make it year round.

Black Tagliatelle With Shrimps & Tomatoes

Prettaly_BlackTagliatelleWithShrimpsAndTomatoes.jpg

This is one of the easiest and most delicious pasta recipes that I have ever done. I kind of made the sauce by accident (yes, quite some years ago) and its still one of my favorites. You can also use lobster instead of shrimps. Or if you want to go vegi, just leave out the seafood and prepare with lots of basil leaves and the tomatoes only. Enjoy!

Italian Chicken Artichoke Tomato Casserole

ItalianChickenArtichokeTomateCasserole.jpg

Weekday dinners are sometimes hard to think of I find. You often don’t feel like really cooking in the evening after a long day at work. At least that’s how I feel. So I have secretly gotten fond of preparing dinners that actually do all the work for you. You just need to combine all the ingredients and then everything goes into the oven. Plus its also good to prepare for a bunch of people or just for two. And this dish being green white and red, just makes it look beautiful!

Roasted Potatoes with Kräuterquark

Prettaly_Kraeuterquark_RoastesPotatoes.jpg

Kräuterquark kind of resembles sour cream with chives (with more herbs). «Kräuter» in German translates to «herbs» in English. I love to combine it with roasted or cooked potatoes and with meat as a sauce (yeah, summer is back this weekend!). Plus it is great as a dip for veggies at a party!
