Sugar-Free Carrot Bread

In February and March it’s the typical fasting time. And this year, we are going forward with this and are fasting alcohol and sweets (anything like desserts, sugar, sweeties, chocolate (yes, I know its not that easy)). And this is where a friend gave me this sugar-free carrot bread recipe, which substitutes sugar with dates. Clever idea I thought and gave it try and you know what? It’s really tasty! We served it for brunch and as an afternoon snack – both perfect!

Coconut Tapioca Pudding with Mango

We were invited to a great weekend out in the snow lately and our hosts made this absolutely delicious coconut tapioca pudding. Originally it was supposed to be a dessert, but we ended up eating the pudding for breakfast and I am now absolutely addicted! If you like rice pudding, you’re probably going to like tapioca. Thanks for the inspiration!

Tuna-Capers-Pasta

Thanks girls, for going down memory lane and asking for the recipe of my typical «student dinner» (which is quite some time ago – haha!). A dear friend cooked this dinner for me years ago and I adapted it to what I still remembered. It’s a perfect dish for a weekday dinner that is super easy to prepare. And with the tuna and capers that don’t have fast expiration dates, ideal to store for emergencies and to prepare when you want to have a quick & easy dinner, without having to shop for ingredients!

A few weeks ago I teased you guys with an upcoming recipe for the best (at least in my eyes) Bolognese sauce. The special trick is the lemon. It gives the sauce a very fresh taste and is just to die for.

Best Banana Bread

This brings up quite a lot of childhood memories…! My mother used to bake Banana Bread and the whole family would love it, spreading Nutella on the freshly baked, still warm, Banana Bread! This time I baked the Banana Bread and served it for Brunch, of course not forgetting to buy a glass of Nutella!

Two weeks ago, a very close friend gave birth to her second son. Of course us girls went to visit her! And what better present can you bring than a box of homemade cookies to enjoy and chit chat over! You don’t need the pearls on top, but they just looked nice!

Italian Rigatoni Pasta Pie

Here goes a pasta dish that is perfect for people on a shoestring. It looks really fancy, but is in fact not much more than a pasta Bolognese (or tomato sauce, if you want a veggie version)! You use a spring-form pan, stand up all the rigatoni pasta in it and «fill» with tomato sauce and a mix of parmesan and mozzarella. There are 2 ways to make this – either you prepare the tomato sauce from scratch or you use your favorite bought jar of tomato sauce. Have fun!

Sugared Cranberries

I stumbled over this recipe and just loved the look of these beautiful red berries, covered in sugar, making them look all wintery! Plus after trying them, I can proudly say they are as tasty as they look! By the way, got these super beautiful Le Creuset heart-shaped baking forms from lovely friends for Christmas! Thanks again – love them!!
