Butternut Pumpkin Soup with Leek

Pumpkin Season is always great! And the variety of all the pumpkins is so big – it always astonishes me. This year round, I really enjoy preparing dishes with the butternut squash / pumpkin. It has a sweet, nutty taste and is ideal for a soup. But you can of course also prepare oven-roasted butternut pumpkin chunks – sprinkle a little cinnamon on top – so yummy!

Caprese Salad

Yay – the sun is out again!! But this classic tastes great all year long! A typical Italian – red, white and green – salad, which goes with just about anything. It’s simple, it’s delicious and you can serve in so many different styles. Plus ideal to keep the summer up a little longer!

If you prepare for a few people, I very much like to use cherry tomatoes and smaller sized mozzarella balls. And fresh basil of course. It looks very nice and is easy to serve.

Yay!! It’s this time of the year again and pumpkins are around allover! It’s so great that you can use them for all sorts of recipes – from pumpkin pie, pumkin soup or for a delicious pumpkin risotto! It’s a very nice addition to a drumstick or just by itself.

Mango Mozzarella Salad

A dear friend once showed me this very simple  but mouthwatering salad. With me having an obsession with mangos at the moment (or always), it’s a super fit. You can also add pomegranate seeds or avocado – whatever suits your taste buds on that day. But the pure original version is my absolute favorite. Perfect all year round, but especially in summer.

Lambs Lettuce with Sesame-Seed Crusted Tomme à la Crème Cheese

These little miniature cheese packs caught my eye in the supermarket and I thought to myself – what could I prepare with these cuties? And guess what? My favorite kind of salad with creamy cheese that was liquidy inside. Very nice!

4th of July Watermelon, Feta & Blueberry Snack

Red, white and blue – 4th of July is nearly here. Don’t know what to prepare yet? Here is an inspiration with the right colors! When we lived in the US, the best thing was the fireworks on the 4th of July (and that its one week before my birthday – and I still love birthdays…). I used to lay on my back and stare into the sky. The blue and golden fireworks are my favorite – up to today!!

Watermelon, Goat Cheese & Spinach Summer Salad

Wow – what a taste explosion! We had a girls night out lately and my friend made this wonderful salad. I changed a few bits and pieces, but kept the general idea…alternatively you can use rocket salad and walnuts instead of baby spinach and Pecan nuts.
Super fresh. Ideal for summer and I just can’t get enough!!

Lambs Lettuce with Seed-breaded Feta

The sun is out and a fresh salad is all you can think about? Here is a great way to add a little extra to your salad! Feta is always nice with salad, but the crust makes the whole salad to a real lunch or dinner and doesn’t leave your hungry. You can of course also prepare as a starter. The crispy crust is delicious and I can also imagine other fruit that would go well with it!
