Lettuce Hearts with Meatballs, Avocado & Dates

With the nice weather outside I really crave a healthy lunch or dinner. My fridge still had a bit of minced meat left, so I thought I might aswell prepare a salad with meatballs! It turned out really nice and due to the fact that meatballs are delicious warm and cold, it’s great to prepare.

Gilthead Seabream (Dorade) with Mediterranean Vegetables

GiltheadSeabreamWithVeggies.jpg

This is a really delicious and great to pre-prepare dinner dish if you have guests. The oven does all the work and you can prep easily and clean up before the guests arrive. And it’s a fairly light and healthy dinner, giving you a little room to have a heavier starter and/or dessert.

Pumpkin Risotto

Yay!! It’s this time of the year again and pumpkins are around allover! It’s so great that you can use them for all sorts of recipes – from pumpkin pie, pumkin soup or for a delicious pumpkin risotto! It’s a very nice addition to a drumstick or just by itself.

Tagliatelle with Chanterelle Mushrooms

Prettaly_TagliatelleChantarelle.jpg

These crazy looking mushrooms are just delicious. I have to admit – a little annoying to prepare, as you have to clean them quite a bit. Best is to brush them to remove any soil rests or, if you prepare them directly, I sneakily used water and patted them dry straight away. The problem with water is, that the mushrooms suck it up…

Oven-Roasted Vegetable Casserole

Prettaly_OvenVegetablesCasserole.JPG

Preparing food for a bunch of people is always a little tricky. With this beautiful looking casserole, you manage to do 2 in 1, by just stacking all of the veggies. Really like this as an alternative to oven-roasted veggies that you do on a baking tray. It’s great for a BBQ outside with lots of friends, as you can prepare in advance and don’t need to remain in the kitchen until everything is ready! OR just as a side dish to a piece of meat for dinner with the family.

Lambs Lettuce with Sesame-Seed Crusted Tomme à la Crème Cheese

Prettaly_Salad_Cheese.jpg
These little miniature cheese packs caught my eye in the supermarket and I thought to myself – what could I prepare with these cuties? And guess what? My favorite kind of salad with creamy cheese that was liquidy inside. Very nice!

Pesto Pasta with Mozzarella & Pine Nuts

Pesto is such a great invention. It’s delicious, easy to make and can be eaten in so many ways. One of my favorite ways to enjoy it is with pasta in combination with mozzarella. Hope you like it!

German Pancakes (Pfannkuchen)

Prettaly_GermanPancakes.JPG

Another lovely walk down memory lane…as children (and up to today) I adore German pancakes – they are a little different from the American version (which are much more fluffy) and also different to the French crepes, which are super thin.

You can prepare them sweet and salty – for example with a little cheese inside and / or ham. Or for the sweet version with apple sauce, a mix of cinnamon and sugar, Nutella, marmalade or my favorite with butter and sugar on top! Yum!!

Bacon-wrapped Green Beans

Prettaly_BaconWrappedGreenBeans.jpg

Not sure why, but since I was pregnant with my little son, I am kind of obsessed with bacon. I love it in salads, wrapped with dates or now as another nice and tasty alternative with green beans. It just gives every meal a little something extra…
