Salad with Oatmeal-Breaded Chicken Nuggets

Shortly I was on a trip, coming home and at the airport I stumbled over a salad with chicken nuggets. Instantly I had a major craving for this, but – typical airport – they priced the salad super high and I just thought to myself: Oh well, then I know what’s on my menu the next week! And here we are! And I wanted to make a slightly different version of the chicken nuggets and prepared them with oatmeal-breading instead or “normal” breading. Well actually I did both! Haha! Beetroot & Feta Salad

I had this salad at a close friends place a few years ago and it is just so deliciously easy to prepare, that I made my own version here. Plus the good thing is, you can have both in the house and can prepare if you get spontaneous guests, as feta has a really long-lasting expiration date. Give it a try! Ideal also for a BBQ – the season is coming!

Winter Spinach, Couscous & Sweet Potato Salad

Another one of those days where I look into the fridge and need to find something to eat! And then this delicious winter salad was the result! The additional plus was that I also had some finger food for the baby 😉

Fried Salad with Soft-Boiled Egg & Bacon

Some time ago I stumbled over this interesting way of preparing salad. What I like is the fact, that it’s a light dinner, easy to prepare and still you have something warm in your tummy on these colder days heading towards Christmas (and all the deliciousness that goes with it). Works really well with a fried egg too! Give it a try!

Asian Veggie Stir-fry

Here goes another weekday dinner idea. Fairly simple to prepare, you just need a few of the typical sauces that Asian dishes nearly always include. In the end you have a nice and light dinner alternative, easy of course also to add meat, if you feel like it.

Lettuce Hearts with Meatballs, Avocado & Dates

With the nice weather outside I really crave a healthy lunch or dinner. My fridge still had a bit of minced meat left, so I thought I might aswell prepare a salad with meatballs! It turned out really nice and due to the fact that meatballs are delicious warm and cold, it’s great to prepare.

Mango Mozzarella Salad

A dear friend once showed me this very simple  but mouthwatering salad. With me having an obsession with mangos at the moment (or always), it’s a super fit. You can also add pomegranate seeds or avocado – whatever suits your taste buds on that day. But the pure original version is my absolute favorite. Perfect all year round, but especially in summer.
