Saltimbocca alla Romana

This is an Italian classic – originating from Rome. It consists of practically only 3 ingredients but is pure perfection for your taste buds…
It’s fairly simple to prepare and due to the thin slices of veal, the cooking time is really short, which is very helpful when preparing for guests (or hungry family)!

Sfoglia alla Valdostana

Sometimes its just super nice to reminisce about the last vacation you had…and for me this involves the thought of a delicious Valdostana. Last time I enjoyed a piece was at the pool side for lunch in Italy. But what is a Valdostana? It’s a puff pastry quiche style dish filled with ham and cheese. Perfect to go with a green or cucumber salad.

Black Tagliatelle With Shrimps & Tomatoes

This is one of the easiest and most delicious pasta recipes that I have ever done. I kind of made the sauce by accident (yes, quite some years ago) and its still one of my favorites. You can also use lobster instead of shrimps. Or if you want to go vegi, just leave out the seafood and prepare with lots of basil leaves and the tomatoes only. Enjoy!

Italian Chicken Artichoke Tomato Casserole

Weekday dinners are sometimes hard to think of I find. You often don’t feel like really cooking in the evening after a long day at work. At least that’s how I feel. So I have secretly gotten fond of preparing dinners that actually do all the work for you. You just need to combine all the ingredients and then everything goes into the oven. Plus its also good to prepare for a bunch of people or just for two. And this dish being green white and red, just makes it look beautiful!

Melanzane alla Parmigiana (Italian eggplant, tomato & cheese casserole)

Being an Italy fan, I really enjoy the Italian food. This time I made an Italian eggplant, tomato and cheese casserole. It’s one of my favorites and actually not really difficult to prepare. Often I even prepare as a casserole a day before serving as it gets better every time you heat it! It’s perfect as a weekday dinner, but also great when served as a side dish to a steak or a BBQ.

Tricolore Tomato Mozzarella Basil Sandwich

Italian Bolognese Sauce

A few weeks ago I teased you guys with an upcoming recipe for the best (at least in my eyes) Bolognese sauce. The special trick is the lemon. It gives the sauce a very fresh taste and is just to die for.

Italian Ricotta Cookies

Two weeks ago, a very close friend gave birth to her second son. Of course us girls went to visit her! And what better present can you bring than a box of homemade cookies to enjoy and chit chat over! You don’t need the pearls on top, but they just looked nice!
